Hungarian Meat Stew
Today I decided to make my grandmother’s authentic Hungarian Goulash, otherwise known as meat stew. I figured it would be a hearty meat and paprikash dish to warm our bones on this first freezing day of 2012. I also happened to have found perfectly good frozen Kosher stew meat at 50% off when I did my grocery run this morning. How’s that for a great deal? So this big pot of tasty meat stew is only costing me $7 for 2 lbs of meat in it. I encourage all my frugal shoppers to always be on the look out for deals like these and not be afraid to buy them when they come up. This way you can treat your family to a special meat meal at the same cost as a dairy one.
Here’s my recipe for Authentic Hungarian Goulash, as passed down from my Hungarian grandmothers. Its very similar to my Chicken Paprikash dish that I posted a while ago and has been incredibly popular among my readers.
Ingredients
1 – 2 lbs of stew meat
1 chopped onion
1 -2 large tomatoes chopped
1 large pepper (any type is fine, today I used a yellow one to make it colorful)
1-2 carrots
4 potatoes peeled and cubed
2 heaping TBSP of Hungarian Paprika
1 TBSP of sugar
1/2 cup water
Salt & pepper to taste
Procedure
In a deep round pot (medium size soup pot) saute onion in the olive oil until the onions are clear and shiny, not browned. Take the pot off of the heat and add the paprika to the onions (according to my family, the trick with Hungarian paprika is to add it when the pot is off the flame for full flavor). Mix well. Add the rest of the vegetables and mix again. Put the pot back on the flame and add your meat. Brown the meat on both sides for about 5 minutes. Add the water, and the rest of the ingredients, cover and bring to a boil. Once boiling reduce the heat and simmer for about 1 hour. After 1 hour add the potatoes and let cook for another hour. Mix once or twice when cooking. You can cook this for longer than 2 hours, the longer it cooks, the softer and tastier the meat gets. After the first hour the meat is fully cooked.
Serve the meat and potatoes as a full meal alone or as shown here on top of egg noodles with peas for more variety.
